heat oil & salt in a skillet and fry corn tortillas until brown and crispy.
shred chicken and season with enchilada sauce, lemon juice, chili powder, season salt, cumin and garlic powder; heat in a small pot until the chicken absorbs most of the sauce. if you like onion you can saute some and add to the chicken.
heat beans.
layer beans, cheese, chicken, lettuce, diced tomato, top with taco sauce. serve with my spanish rice recipe.
Rice can be the long cooking rice or Minute rice in whatever amount you need for the occasion.
Being a working woman, I personally prefer the Minute type.
Either is equally good for this recipe.
Add the desired amount of picante sauce to the hot rice and voile!!
Spanish rice made easy, real easy.
Start with big pan.
You can use black beans, red beans or pinto beans. (Wash the beans well if from a can.)

Cut onion and bell pepper in strips.
Saute in butter or oil until tender.
Add string beans and tomatoes.
Simmer about 20 minutes.
Add seasoning.
Delicious served with Spanish rice and barbecued chicken.

Brown peppers and onions together in butter, then add other ingredients.
Simmer for 10 minutes.
Cook beans until just tender, drain.
In oven dish, place a layer of beans, layer of sauce and layer of grated cheese.
Continue this process until beans and sauce are used.
Cover top with buttered bread crumbs and bake for 35 minutes in 350\u00b0 oven.
Cook the beans according to the package directions.
Add the remaining ingredients and turn into a casserole dish.
Bake at 400\u00b0 for 30 minutes.
Saute onion and pepper with 3 tablespoons butter.
Mix green beans until hot.
Mix eggs into beans (like scrambling eggs). Cook until eggs are done.
Serve with hot dry pepper.
Let beans soak overnight. Put in fresh water. Add salt. Chop onion and pepper. Add to beans with a can of diced tomatoes (or canned tomatoes). Let cook for several hours on a low temperature.
Brown about a pound of ground chuck in small amount of oil. When meat is browned, add onion.
Let this cook for several minutes.
Next, add celery and bell pepper, then a can of tomatoes. Season with salt and pepper to taste.
Let these ingredients cook slowly for about 5 minutes.
At this point, if mixture is too juicy, it may be thickened by adding about a tablespoon of flour to make a smooth paste.
Add red kidney beans.
Simmer for 30 minutes.
Fill a pot of water with all ingredients in it.
Let beans boil until water is thick like stew.
Drain green string beans.
Place in baking pan, 8 x 8-inch. Sprinkle with approximately 1/4 cup brown sugar.
Dab with ketchup.
Cover with onion and bacon.
Bake at 375\u00b0 for 45 minutes to 1 hour.
Put all in pot; cook as you would dry beans.
Cook beans until they are done and a small amount of water is left in them; set this aside.
Cut up a large onion and add the meat; cook until brown.
Add tomato sauce.
Add chili powder and enough salt to satisfy your taste.
Simmer for 1 hour.
Serve with crackers.
Brown the peppers and onions. Add the tomato soup, beans and water.
Cook the hamburger until the red disappears.
Add to mixture.
Serve over rice.

Stir beans into the sauteed
String & cut beans into 2.5cm lengths. Place into a shallow dish with stock, cover & cook on high for 8 minutes or until beans are tender; drain & reserve stock.
Place butter, onion & garlic in a separet dish, cook on high for 4 mins or until onion is tender.
Stir in flour, then lemon juice and reserved stock, cook on high for 3 mins or until mixture boils & thickens, stirring once.
Combine beans with hot sauce, reheating for approx 2 mins if necessary.
Marinade douchi with millet wine for about 10 minutes.
Cut ginger into thin strips.
Put small amount of water into the pot, let it boil.
Put fish heat resistant bowl or plate, add beans and cover with ginger.
Place into the pot, steam for 20-30 minutes.
Serve with rice and asparagus.
