Mix all ingredients and beat with a hand mixer 7 to 10 minutes.
Put cupcake papers into small tins. In each cupcake paper put one vanilla wafer, upside down.
Spoon filling in cupcake paper on top of vanilla wafer.
Bake at 350\u00b0 for 15 to 20 minutes, until top starts to crack and edges are golden brown.
Let cool.
Spoon cherry pie filling on top of mini cheesecakes.
Refrigerate until served.

Preheat oven to 400\u00b0F for muffins, mini
Line muffin tin with foil liners.
Place 1 vanilla wafer in the bottom of each.
Mix cream cheese, sugar, vanilla and eggs until smooth.
Fill cups and add toppings.
Bake at 325\u00b0 for 25 minutes.
Mix cheese, eggs, sugar and vanilla until creamy. Put 24 wafers flat side down in paper-lined muffin tins. Put 1 tablespoon of cream cheese mixture over each. Bake at 375\u00b0 for about 15 minutes. They will not brown; do not overbake. Put 1 teaspoon of pie filling on each and refrigerate.
Heat the oil in a large saucepan and cook the onion and garlic over low heat for 6-7 mins until softened. Add the rice mix and cook, stirring for 1 min. Pour in the wine and simmer for a few mins then gradually add the stock, about 1 ladleful at a time. Allow the liquid to be absorbed by the rice before adding the next ladleful. This will take about 35 mins.
Stir in the butter and Parmesan cheese and season to taste with salt and freshly ground black pepper. Serve in warm, shallow bowls.
