Italian Meat Loaf

Preheat oven to 350\u00b0.
In large mixing bowl combine all ingredients.
Once mixed, split in half for 2 loaves, if desired. In a large pan or 2 small pans, shape into loaves.
Bake 1 hour or until done.
A large loaf serves 8, small serves 4.

Lasagna

Let cheeses come to room temperature.
In a bowl, beat eggs; add cheeses and Italian seasoning.
Mix well.
Cook noodles until soft.
Layer noodles in a 9 x 13-inch baking dish.
Add sauce and cheese.
Continue to layer until the pan is almost full.
Top with 1 pound Mozzarella cheese.
Bake at 350\u00b0 for 45 minutes to 1 hour.

Italian Meat Loaf

Use your favorite recipe for meat loaf.
In place of tomato sauce, use spaghetti sauce.
Add Italian seasoning.
Prepare the rest as usual.
Just before it's done, add cheese on top, then finish baking.

Carlo Peraldo'S Recipe For Lumpy Tomato Sauce

Chop onion, pepper and celery very coarsely; saute in heavy saucepan with olive oil until tender.
Cut stewed tomatoes into quarters and add to the vegetables along with the tomato sauce and Italian seasoning.
Bring to a boil.
Reduce heat and simmer, stirring occasionally, about 1 hour or until sauce thickens.
Add salt and pepper to taste.

Creamy Risotto (Instructions For Risotto Mix Gift Bag)

Heat the oil in a large saucepan and cook the onion and garlic over low heat for 6-7 mins until softened. Add the rice mix and cook, stirring for 1 min. Pour in the wine and simmer for a few mins then gradually add the stock, about 1 ladleful at a time. Allow the liquid to be absorbed by the rice before adding the next ladleful. This will take about 35 mins.
Stir in the butter and Parmesan cheese and season to taste with salt and freshly ground black pepper. Serve in warm, shallow bowls.
