Boil the chicken breasts with bay leaves, tarragon and onion.
Once the breasts are cooked, remove them from heat and allow them to cool.
Cut them into 1/2 inch cubes.
Make the dressing by mixing everything listed under\"dressing\" together.
Then add the chicken cubes to the dressing.
Put it in a plastic dish and refrigerate for 4 hours so that the flavours get stronger.

To assemble ONE sandwich; layer 1 slice of toast
For Crab Cakes: Pick through crabmeat gently to remove cartilage.
In mixing bowl gently combine all ingredients and portion in to 2 ounce cakes (about 8-10).
Dredge in flour and saute half of the cakes at a time in butter, over medium heat, until golden brown on each side.
Drain on paper towels.
For Avocado Wasabi Mayonnaise: Combine all ingredients and chill well.
Mix 1/2 package cornbread with just enough milk for the mix to stick and dredge softshell crabs in the wet corn mixture, then dredge in the reserved dry cornmeal.
Place butter, cognac and lemon juice in a large skillet with medium heat. Heat mixture until butter is clarified and just begins to bubble. Add salt and pepper. When butter mixture is ready add the softshell crab and fry on each side until golden. Serve alone or as a sandwich.
Mix celery, crab, mayonnaise, etc. together in salad form.
Lay 8 slices of bread in a large buttered pan.
Divide crab mixture evenly; spread on bread.
Top with cheese slice, then top with other slice of bread.
Pour the egg and milk mixture over sandwich. Cover tightly with foil.
Refrigerate overnight.

Cook bacon until crisp, remove and drain.
Saute mushrooms and onions in bacon drippings until the mushrooms begin to turn brown.
Cool.
Combine the crab, cheeses, and mayonnaise, then add to the bacon/mushrooms/onions mixture.
Spread the mixture on sliced, buttered muffins.
Place sandwiches on a cookie sheet and bake at 400\u00b0 for 15 minutes.

You may substitute shrimp for the crab meat, if you wish.
For crab cakes:
In a mixing bowl, combine the crab meat, eggs, salt
Melt butter in skillet.
Put soft shelled crab in and sprinkle a little Old Bay and pepper.
Cover and cook slow for 5 minutes. Remove cover and increase heat.
Brown on both sides.
Serve on bread with mayonnaise or butter, lettuce and thin slice of tomato.
You may also like a thin slice of sweet onion on the sandwich.

After cooking crabs in oil, garlic, hot pepper and parsley,

cook until crabs are done about 10 more minutes.

Split open foccacia bun. Spread tzatziki sauce on top half of bun and cover with provolone slice. Place cheddar slice on bottom half of bun.
Layer the remaining ingredients over the bottom half of the bun.
Cover with top half of bun, slice in half, and enjoy!
For tzatziki sauce: Combine all ingredients and mix well. Allow flavors to blend in fridge overnight. If using the recipe included, it will make more than needed for one sandwich.
