For Crab Cakes: Pick through crabmeat gently to remove cartilage.
In mixing bowl gently combine all ingredients and portion in to 2 ounce cakes (about 8-10).
Dredge in flour and saute half of the cakes at a time in butter, over medium heat, until golden brown on each side.
Drain on paper towels.

Put all ingredients into a blender.
First pulse blender to aid in crushing the ice well.
Blend until a smooth consistency.
Taste to see if it is sweet enough. Depending on the size of the avocado, you may need more.
Pour into cups and enjoy promptly. This recipe is best not left sitting because of the ice and the avocado.

Layer avocado, mango, kale, banana, white beans, and water in a blender; blend until smooth, adding more water for a thinner smoothie.

Blend almond milk, avocado, banana, ice, and honey in a blender until smooth.

Strawberry Banana Avocado Smoothie

Grind oats in a blender into a powder-like consistency. Add ice cubes; pulse until ground. Add banana, avocado, and strawberries; blend until smooth. Pour in carrot juice and yogurt; blend until combined.

Potato Nests With Wild Mushrooms And Avocado Cream

For avocado cream, mix avocado pulp with lime juice.
Toss potato with cornstarch and nutmeg and season to taste. Shape into 12 nests. Heat 2 tbsp oil in a pan and fry nests on both sides for about 4 mins until golden brown. Remove and drain on paper towels.
Add remaining oil and saute sliced mushroom for 2 mins until golden then remove from heat. Add diced mushroom and saute for 3 mins. Add parsley and season to taste. Serve with nests, pancetta, avocado cream and sliced mushroom.

Crisp Ocean Trout With Avocado Salsa

Heat oil in a large skillet on medium.
Cook fish, skin side down, 2-3 mins, or until golden and crisp. Turn and cook for a further 3 mins, until done to your liking. Season to taste. Squeeze lemon juice over cooked fish.
Meanwhile, for avocado salsa, toss together avocado, lime segments, and cilantro. Season to taste.
Serve fish straight from pan with salsa, oven-baked fries, and lemon wedges.

Lamb Salad With Avocado Dressing

For avocado dressing, puree avocado, garlic, yogurt, stock and lemon juice until smooth. Set aside.
Heat oil in a pan and sear lamb for 2-3 mins, until cooked to your liking. Season to taste then cut into bite-size pieces. Serve with frisee, tomatoes, mushrooms and avocado dressing.
