Lamb Salad With Avocado Dressing - cooking recipe
Ingredients

1/2 None small avocado, pitted, flesh removed
1 clove garlic, finely chopped
1 tbsp low-fat yogurt
1 tbsp vegetable stock
1 tsp lemon juice
1 tbsp canola oil
1 None lamb chop
2 oz frisee
2 oz cherry tomatoes, halved
1.5 oz button mushrooms, sliced
Preparation

For avocado dressing, puree avocado, garlic, yogurt, stock and lemon juice until smooth. Set aside.
Heat oil in a pan and sear lamb for 2-3 mins, until cooked to your liking. Season to taste then cut into bite-size pieces. Serve with frisee, tomatoes, mushrooms and avocado dressing.
