Heat the oil in large, deep frying pan. Add the ground beef, onion, garlic, pepper and celery. Fry for 4-5 mins, stirring, breaking up the beef with a wooden spoon.
Add the chili seasoning mix. Stir in 1 1/4 cup water and bring to a boil. Reduce heat and simmer for 5 mins, stirring occasionally.
Add the kidney beans, sweet corn, tomatoes, parsley, cilantro and chili pepper. Bring to a boil. Reduce heat and simmer for 5 mins. Season to taste. Serve with potato wedges, if desired.
Shell and devein shrimp; set aside.
Heat olive oil in saucepan and add rice, onion, green pepper and garlic.
Saute until rice is lightly browned while stirring constantly.
Reduce heat and add tomatoes and their juices.

Microwave turkey chili and spread over beans.
Top with enchilada sauce and cheese.
Fold in both edges and wrap. You may need to hold with a toothpick.
Microwave on high about 30 seconds.

Heat oil in a medium skillet on medium heat. Add carrots and garlic and cook and stir for 25 mins or until just tender. Cool for 20 mins.
Process cashews in food processor until coarsely chopped. Add carrot mixture, ricotta and sweet chili sauce. Process until almost smooth. Season with salt and pepper.
Spoon mixture into a serving bowl. Drizzle dip with additional chili sauce. Serve with crackers.
