Quick And Easy Chili - cooking recipe

Ingredients
    1 tbsp olive oil
    300 g beef steak mince
    2 None onions, peeled and finely chopped
    2 None garlic cloves, finely chopped
    1 None red pepper, deseeded and chopped
    250 g celery, chopped
    50 g sachet chilli con carne spice mix
    400 g can kidney beans, drained
    400 g can sweetcorn, drained
    400 g carton chopped tomatoes
    1 tbsp chopped parsley
    1 tbsp chopped coriander
    1 None chilli, trimmed and chopped
    None None potato wedges, to serve (optional)
Preparation
    Heat the oil in large, deep frying pan. Add the ground beef, onion, garlic, pepper and celery. Fry for 4-5 mins, stirring, breaking up the beef with a wooden spoon.
    Add the chili seasoning mix. Stir in 1 1/4 cup water and bring to a boil. Reduce heat and simmer for 5 mins, stirring occasionally.
    Add the kidney beans, sweet corn, tomatoes, parsley, cilantro and chili pepper. Bring to a boil. Reduce heat and simmer for 5 mins. Season to taste. Serve with potato wedges, if desired.
