Place the boneless pork roast in the resealable plastic bag
Prepare grill for indirect heat.

Marinate pork roast in lemon juice 3 to 4 hours or overnight in refrigerator.

Peel potatoes and cut in large cubes. Peel carrots; cut into 2-inch lengths and quarter lengthwise.
