Hickory Grilled Pork Roast - cooking recipe
Ingredients

1 (3 lb.) boneless pork roast
1 Tbsp. olive oil
1 Tbsp. sea salt
1/4 c. chopped fresh rosemary
2 Tbsp. finely chopped fresh thyme or 2 tsp. dried
2 Tbsp. freshly cracked pepper
hickory chips
Preparation

Rub roast with olive oil and sprinkle with sea salt.
Combine rosemary, thyme and pepper.
Rub over roast and let stand 30 minutes.
Soak hickory chips in water for 1 hour.
Prepare charcoal fire, let burn 20 minutes.
Place hickory on coals.
Place roast on rack.
Cook, covered with grill lid, over medium-high coals (350\u00b0 to 400\u00b0) 40 minutes, turning often.
Let stand 15 minutes before thinly slicing.
Yields 6 to 8 servings.
