Preheat oven to 350\u00b0F.
Chop onion and green bell pepper.
Gently mix ground beef, bread crumbs, onion, green bell pepper, 1/2 of the tomato sauce, egg, salt, and pepper until combined.
Do not overmix. Form into a loaf and place in a shallow pan.
Whisk together the rest of the tomato sauce, water, brown sugar, mustard, and vinegar until smooth. Pour over the meatloaf.
Bake for 1 hour and 15 minutes, basting with pan juices about every 20 minutes. Let rest 15 minutes before cutting and serving.

For the Meatloaf, combine all of the ingredients
Cook ham until tender in 3 quarts of water.
Remove ham from pan and remove fat and bone.
Cut in 1/2-inch square pieces. Bring 2 large (7 gallon size) pots 1/2 full of water to a boil. Add 1/2 of the ham broth to each pot.
Add chopped celery, carrots, potatoes and onions and bring to a boil again.
Add the Pennsylvania Dutch squares and cook
until Pot Boi is tender.
Add ham base and pepper for taste.
Add parsley when ready to serve.
MEATLOAF:

Beat the egg and barbecue sauce together.
Crush the Cheez-Its in a plastic bag with your rolling pin.
Dip each slice of meatloaf into the egg and barbecue mixture and then into the cheez-Its.

Cook on each side, approximately 3 minutes, until browned on each side, and hot all the way through.

Meatloaf: Combine meat loaf ingredients and place into meatloaf pan or regular loaf pan. I usually have a little left over because the pan I use is a small one. The excess I freeze for future use as stuffed pepper filling (there's usually enough for 2 peppers).
