Mix crumbs and melted butter or oleo. Cover a thin layer of crumbs with oysters. Sprinkle with salt and pepper. Add some of liquid and cream. Repeat layers and top with crumbs. Bake 30 minutes at 450\u00b0. May double or triple this recipe to make a nice size casserole. This recipe will only serve about 4 people.

Mix liquid from oysters, half and half and 3/4 teaspoon Worcestershire sauce together and set aside.
Mix cracker crumbs and butter and spread 1/3 mixture on bottom of dish.
Put 1/2 of oysters on top of crackers and add 1/2 of milk mixture.
Repeat layer and top with remaining cracker crumbs.
Bake at 350\u00b0 for 40 minutes or until golden brown. Serves 4.
I usually double or triple this recipe and serve it with holiday dinners.
If using fresh oysters, steamed in pan with one
keep warm.
For the oysters: heat olive oil in skillet
Drain oysters.
In a buttered 1-quart casserole, place a layer of oysters, a layer of crackers, another layer of oysters and top with cracker crumbs.
Season.
Pour liquid from oysters or milk to measure 1/2 cup liquid over casserole and bake at 350\u00b0 for 20 minutes.
Serves 6.
Put 1/2 oysters in bottom of casserole.
Combine crackers, salt, pepper and butter; toss to mix.
Sprinkle 1/2 of mixture over oysters, then another layer of oysters.
Add Worcestershire to milk and pour over oysters.
Sprinkle rest of crumbs on top. Bake at 400\u00b0 for 35 minutes.
If more moist oysters are desired, use 2 cups milk.
Fried Oysters:.
Combine cornmeal, flour, paprika, thyme, salt and pepper in a dish. Toss oysters in cornmeal mixture.
Heat enough oil to film base of skillet on high heat. When oil is very hot, add oysters, but do not crowd pan. Saute for about 1 to 2 minutes or until coating is browned. Remove immediately to serving dish. Add more oil as needed to fry remainder. Serve with Chipotle Mayonnaise (recipe follows).
Chipotle Mayonnaise:.
Combine mayonnaise, chipotle peppers and adobe sauce. Season with salt and stir in coriander.

Sprinkle with grated cheese. Bake at 450\u00b0 for 25 minutes.
Drain oysters, reserving liquid.
Mix crumbs and butter. Grease casserole and line bottom with 1/2 of the crumbs.
Add half of the oysters; sprinkle lightly with nutmeg, pepper and parsley. Repeat crumbs, oysters layer and season.
Combine Worcestershire sauce, salt and liquid.
Pour over casserole.
Top with crumb mixture and bake at 350\u00b0 for 45 minutes.
