Mix together first 5 ingredients, then add spices to taste. Knead in enough flour until dough can be rolled out and made into thin layers (can use regular round cake pan as cutter, slicing each layer the same size).

Cook down apples; sweeten to taste.
Can add more spices. Put apples between layers as you stack them.

ICING:
Cook on stovetop on med.
heat until sugar is dissolved and mixture is brown.
Leave cake in pan and using a toothpick, poke several holes into cake.
Pour 3/4 of icing onto cake.
Let set 15 minutes.
Flip cake onto plate.
Brush remaining icing onto top& sides of cake.
