Norwegian Lutefisk

Place the lutefisk in a kettle, and add enough cold salt water to completely cover them(some people like to place the lutefisk in cheesecloth and tie the ends itno a bag, before placing in the kettle.).
Bring gradually to a boil. (Caution: It will be done when brought to a full boil, and if boiled too long the fish will fall into pieces.).
Remove from the burner, skim off any foam that appears and the let the lutefisk stand for 5-10 minutes.
Drain well, and serve steaming hot on warmed plates.

Baked Lutefisk

Thaw lutefisk if frozen and cut into serving pieces.
Rinse and drain well. Place fish skin side down in one layer of heavy foil.
sprinkle with salt.
Bring foil around and make a fold in it.
Fold up ends and seal.
Place in shallow glass pan on a rake, seam up and bake at 325 for atleast one hour.
I do it a little more.
Cut corner and drain out excess water.
Serve with melted butter on a heated platter.

Soak for 3 days in this solution.
Then soak for 4 days in clear water, changing the water every day.

Sugar Cookies(My Norwegian Grandmother'S Recipe)

Cream sugars and margarine.
Add eggs; beat well.
Add oil. Mix in dry ingredients.
Refrigerate at least one hour or more is better.
Drop by spoonfuls and roll in balls to make perfectly round cookies.
Dip bottom of glass in sugar and press down to flatten.
Bake at 400\u00b0 until brown on edges, 10 to 12 minutes. Makes several dozen.

Beat yolks and water until thick; gradually add sugar and vanilla.
Beat egg whites and cream of tartar until very stiff. Fold cake flour, which has been sifted with salt, alternately with egg mixture into the whites.
Bake in 2 layers (ungreased pans) in a 325\u00b0 oven for 25 minutes.
When cake is cool, split each layer to make 4 layers.

Beat eggs and milk together.
Stir in flour and baking powder. Put 1/2 tablespoon butter in a 9-inch frypan or crepe pan.
Add 2 tablespoons of mixture and spread quickly around the pan.
Cook until dry on the top and remove.
Spread with butter, sugar and cinnamon and roll up.
Also good with honey or syrup or whatever you like.
Half recipe for smaller batch!

Norwegian Pudding

Mix dry ingredients.
Add eggs, apples, nuts, coconut or raisins.
Bake at 350\u00b0 for 35 minutes.
Use a 13 x 9-inch cake pan.
Cut in small blocks and serve with whipped cream or Cool Whip.
This recipe gets no shortening.

Heat pan; put a little butter to coat bottom of pan.
Pour a little batter and roll to coat bottom of pan.
When firm, turn with spatula.
