Cook until thick (about 1 to 2 minutes). Cool.

Mix gelatine, Sweet 'N Low, salt and spices in top of double boiler or nonstick pan.
Beat 3 egg yolks and milk together.

Cool and chill until mixture mounds slightly when dropped from a spoon.
Beat egg whites until stiff. Add 1/2 cup sugar gradually, then fold into the cold pumpkin mixture.
I did not use Sweet 'N Low in the egg whites.
Pour into cool pie shell, graham cracker is good.
Refrigerate and serve with lite Cool Whip.

Diabetic Lemon Pie

Combine egg yolks, Sweet 'N Low, salt, lemon juice and rind in top of double boiler, about 5 minutes.
Soften gelatin in cold water and dissolve in hot mixture.
Cool.
Beat egg whites until stiff but not dry.
Fold into lemon and pour into a flaky crust and chill.

Easy Low-Fat Chili

In a large saucepan, cook onion and green pepper in half cup water until tender.
Add beans, tomato paste and tomatoes. Stir in chili powder, salt (if desired), pepper and remaining water; bring to a boil.
Reduce heat, cover and simmer for 20 minutes.
Yields 7 servings.
Diabetic exchanges:
One 1 cup serving prepared without added salt equals 2 starch and 1 1/2 vegetables.
