Broccoli-Pasta Side Dish

Saute broccoli, garlic, margarine, salt and pepper in oil until tender.
Toss gently with pasta and serve topped with grated parmesan.

Cook fresh broccoli.
Do not overcook.
Drain and cut into small pieces.
In skillet, add olive oil and broccoli.
Sprinkle garlic powder over broccoli to taste.
Stir-fry until heated through.

Grilled Broccoli

Divide crowns in half so you have a flat side. Blanch for 3 minutes in boiling water. Drain. Dry off as much as possible so olive oil will stick. Coat in olive oil and salt and pepper. Then place the flat side down and char it over open flame. Flip and dust with olive oil from pan again. Place broccoli flower side down (standing upside down basically). Then flip and grill remaining side. Cover grill for 5 minutes.

Remove from grill. In pan, while still hot, squeeze lemon and lightly coat with fresh parm and garlic salt.

Microwave Lemon Garlic Broccoli

Microwave broccoli and water in covered bowl on high for 6 minutes or til crisp tender.
While it is cooking mix the rest of the ingredients together.
Drain cooked broccoli.
Pour lemon garlic mixture over broccoli and mix to coat.
If using fresh garlic cover the dish and let sit for about 2 minutes to allow heat from broccoli to \"cook\" and remove the raw taste from the garlic.
If using garlic powder you are ready to serve.

Pasta Con Broccoli

Cook shells and drain well.
Cook broccoli and drain.
Saute mushrooms in butter.
Mix all ingredients together and simmer over low heat.
(Mixture will burn easily.)
Add salt, pepper and garlic powder.
Let stand on stove or refrigerate several hours before serving.
Mixture thickens as it sits.
Rewarm before serving.
Serves 2 to 3 as a main dish, 4 to 6 as a side dish.

Cheesy Rice And Broccoli Casserole

In large bowl,
combine soups, milk and sour cream.
Stir in cheeses, rice, broccoli, onion, 3/4 teaspoon of paprika and pepper.
Coat 13 x 9-inch baking dish with nonstick cooking spray and transfer mixture.
Sprinkle with remaining paprika.
Cover and bake at 350\u00b0 for 35 minutes.
Uncover;
bake 5 to 10 minutes longer or until rice and broccoli are tender.
Serves 16 as a side dish.

2 Step Chicken Broccoli Divan

If using fresh broccoli, cut into spears.
In a 9-inch pie plate or shallow casserole dish, arrange broccoli and top with chicken.
Combine soup and milk; pour over chicken.
Sprinkle with cheese.
Combine butter and bread crumbs; sprinkle over cheese. Bake at 450\u00b0 for 15 minutes, or microwave by covering with wax paper and cooking on High for 6 minutes, or until hot, rotating dish halfway through heating.

Mix broccoli, mushroom soup, milk and cheese.
Put in casserole.
Bake 25 minutes at 350\u00b0.
Add onions on top of casserole and bake covered 10 to 15 minutes more.

Mix ingredients well, except broccoli, cheese and 1/4 can onions.
If using fresh broccoli, clean, chop and steam a little. Put broccoli in greased baking dish.
Pour mixed ingredients over broccoli.
Bake at 350\u00b0 for 45 minutes.
Arrange cheese and remaining onions on top.
Bake until melts a little.

Cheesy Broccoli Bake

Cut fresh broccoli into 1-inch pieces.

Rice And Broccoli Casserole

If using fresh broccoli, precook it (but be careful not to overcook).
Prepare rice according to package instructions.
Put broccoli in buttered casserole dish.
Cover with rice; pour soup over rice, then cover with Cheez Whiz.
Bake at 350\u00b0 for 20 to 25 minutes.
Meanwhile, cut bread into bite-size pieces and fry in butter until crisp.
Put bread on top of casserole and bake for another 5 minutes.
Serves 6 to 8.

Chicken Broccoli Romanoff

Cook noodles according to package directions; drain; set aside.
If you are using fresh broccoli, you can add it to your noodles for the last five minutes of cooking.
Combine noodles, broccoli, olives, and all other ingredients in a large bowl.
Pour into a 13 X 9 inch baking dish.
Top with parmesan cheese if desired.
Bake uncovered @ 350F for 30-45 minutes until bubbly in the middle.

Chicken Broccoli Spears

Cut up frozen broccoli or fresh broccoli into small bite size pieces.
Put in buttered casserole dish.
Cut up cooked chicken and place over broccoli in casserole.
Mix cream of chicken and mayonnaise - spread over chicken and broccoli. Sprinkle with cheese then breadcrumbs.
Bake at 375\u00b0 for about 3/4
hour until done.
6 servings.

Sweet Sour Broccoli And Cauliflower

Cook broccoli and cauliflower until tender-crisp.
Turn into a warm serving dish. While vegetables cook, fry bacon until crisp. Remove bacon and reserve.
Save 3 tablespoons of the bacon drippings.
Add onions.
Saute for 2 minutes, then stir in brown sugar, vinegar, salt and pepper.
Heat.
Pour sauce over cauliflower and broccoli in serving dish.
Top with bacon.
Serve immediately.
Serves 4.

Quick Pea Pesto Side Dish

Steam the peas without water if they're still frozen. I prefer the young, tender peas. Drain the peas in a sieve after cooking.
Drain, put into food processor, and add the mint, parsley and salt.
Depending on the consistency of the pea puree, add 1 to 2 tablespoons of fresh cream, or more if you like.
Ground nutmeg is an optional extra seasoning. Depending on taste, you might want to add more mint or/and parsley. This is a nutritious side dish.
Great as a side with roast chicken or lamb.

5 Layer Broccoli(Side Dish)

Layer all ingredients in the order given.
Crumble the Ritz crackers.
Heat through at 350\u00b0 for 30 to 40 minutes.
Great side dish for a buffet or barbecue!
