Sift dry ingredients; set aside. Beat eggs in a large bowl. Add oil and sugar; cream well. Add 'add ins' and vanilla. Add dry ingredients. Mix well. Add nuts.
Spoon into 2 well greased loaf pans. Bake in preheated oven at 325 degrees for 1 hour.
*Makes 2 Large Loafs -- but at Holiday time, I use the small foil pans for gifts -- usually 5 at a time!

Choose a cook-in or water (2 cups per cup of rice) and add with rice, salt (1 teaspoon per cup of rice) and butter or olive oil (2 tablespoons per cup of rice, unless adding a stir-in including butter).

Line a big picnic cooler with a food grade plastic bag.
Boil water and salt together until all salt is dissolved and cool in fridge several hours.
Wash turkey inside and out and place into cooler. Add your optional add-ins to the cooled brine and cover turkey with ice and pour brine over all. Let turkey brine overnight making sure the cooler stays closed and adding ice if needed.

Beat in eggs & vanilla
Add oats and mix until well combined.
Spread mixture thin onto lightly greased cookie sheet(s).
Bake 15 minutes and then ,with a spatula, turn the oats a little so the bottom does not burn.
Bake another 10-15 minutes or until oats are golden brown.
Let oats cool at least 1 hour and then break into desired chunk sizes.
Add desired amount of mix-ins and blend.
