Mix all ingredients (except sausage) together in crock-pot. Cut sausage into thin slices and mix into sauce.
Cook about 15 minutes on high setting.
Turn off and let stand about 12 hours. Turn crock-pot on (low setting) about 3 hours before serving. Serves about 25 persons.

STOVE TOP METHOD:
Stir together all ingredients except sausages in a medium saucepan. Cook over medium heat until bubbly and smooth, stirring often.
Add sausages. Cover and cook over medium-low heat for approximately 10 minutes, or until sausages are heated through, stirring occasionally.
CROCK POT METHOD:
Combine all ingredients except sausages in a 1-quart crock pot. Stir to combine, then add sausages. Cover and cook on high for about 2 hours, or until sausages are heated through.
Soak beans overnight.
Drain and place in crock-pot.
Cover with water; then chop onion and cut sausage.
Add sausage and smoked ham.
Fill crock-pot almost to top with bean mixture.
Add enough water to barely cover.
Cook on high, stirring occasionally.
Serve over rice.
Cook rice according to package directions.
Microwave the smoked sausage for 3-4 minutes.
Cube the cream cheese in small cubes for better melting.
Combine the cream cheese cubes, the cheese whiz, and the rotel in the crock pot, mixing thoroughly.
