Mix corn meal, salt and soda with creamed corn, eggs and milk
In a large pot over medium heat, place potatoes, celery and onion with water to cover. Bring to a boil, then reduce heat and simmer 20 minutes, until potatoes are tender. Drain.
Return vegetables to pot with creamed corn, corn, evaporated milk, cayenne and salt over low heat. Simmer 20 minutes.
Melt butter in skillet; then brown pork chops with the onion. Add creamed corn and milk in skillet.
Let simmer for 30 to 45 minutes.
Serve over mashed potatoes.

Melt butter in large skillet. Drain whole kernel corn and add to skillet along with creamed corn. Allow to come to a boil, then turn down and simmer. Cook down to desired consistency. It's good if you let the bottom brown some and scrape it up and stir it.
Mix Mexicorn with creamed corn.
Add remaining ingredients, except Parmesan; blend.
Pour into buttered 9 x 12-inch casserole; sprinkle with Parmesan cheese.
