Citron Preserves

Peel citron; cut into strips.
Rinse in water, pick up and put in preserving pan (leave the water in preserving pan that drains from rind).
Mix sugar with rind.
When sugar dissolves on low heat, you will have just about a pan full.
Add pineapple.
Cook until mixture is of preserving consistency.

Peel melon and remove seeds.
Bring sugar and water to a boil and simmer for about 5 minutes.
Drop in citron slices and simmer until transparent.
Add lemon juice and rind.
Simmer 15 minutes longer.

Cream sugar and butter.
Crush graham crackers and mix with milk.

Fruit Cake(Mrs. Carmichael'S Recipe)

Clean the fruit.
Cut up the citron and prepare the oranges. Cream the butter and sugar and add beaten egg yolks, coffee, jelly, flour, spices and soda which have been mixed together.
Add the fruit which has been dredged in flour.
Mix all together and fold in the egg whites.
Put in buttered pans of the desired size and shape and set pans in a large pan of boiling water.
Cover with a sheet of heavy wrapping paper and bake 3 hours or set the pans in a steamer and steam 3 hours.

Preserved Citron

Wash citron carefully; cut in halves, remove seeds and cut into eighths.
Sprinkle generously with salt and cover with cold water; allow to stand overnight.
Drain off water, cover with fresh cold water and let stand until the next day.
Drain and skin citron carefully.
Combine remaining ingredients and bring to a boil.
Add citron and cook slowly until citron is tender.
Pack in sterilized jars, fill jars with syrup; cover and process in a boiling water bath for ten minutes.

Watermelon Rind Preserves

After the red has been eaten, scrape out the pink down to the light pink color.
Peel off the rind and cut the other into strips, then into thinner strips.
Place in open pan with sugar (according to pear preserves recipe).
Cook until thickened into preserves. Spoon into jars while hot and seal.

Preheat oven to 350 degrees F.
Ina large bowl, combine the beef, bread crumbs, egg, garlic powder and Worcestershire sauce. Mix well, and place into a meatloaf pan.

Sterilize 6 half-pint jars and lids and set them aside.
In a large saucepan, heat the sugar, water, lemon juice, lemon zest, and fresh ginger to a boil. Lower the temperature so the mixture is simmering, and cook, stirring occasionally, for 10 minutes.
Add the quartered pears and crystallized ginger to the saucepan and continue cooking for 30 minutes, until the preserves thicken and coat a spoon.
Pack the pears and gingered syrup into the sterilized jars, and seal in a boiling water canner.
