Imo Lou Evans'S Citron Preserves - cooking recipe

Ingredients
    5 to 6 lb. citron melon
    5 c. sugar
    4 c. water
    rind and juice of 1 lemon
    4 Tbsp. chopped, preserved ginger or 1 Tbsp. powdered ginger
Preparation
    Peel melon and remove seeds.
    Bring sugar and water to a boil and simmer for about 5 minutes.
    Drop in citron slices and simmer until transparent.
    Add lemon juice and rind.
    Simmer 15 minutes longer.
    Add ginger.
    Pour into hot jars and seal.
