Spray 1 quart baking dish with Pam.
Heat oven to 350 degrees.
Mash yams in a large bowl and add brown sugar, salt, cinnamon, egg, and melted butter.

Top with a layer of marshmallows, then add remaining mixture.

Peel and slice potatoes about 1/4-inch thick.
Arrange in bottom of casserole dish.
Sprinkle sugar over yams with nutmeg. Squeeze lemon juice over potatoes and slice lemon thinly and place over potatoes.
Cut margarine or butter over potatoes.
Cover with foil and bake in 375\u00b0 oven for 45 minutes.

Put mashed yams in casserole. Mix together margarine, cinnamon, ginger, nutmeg, brown sugar and honey.
Mix in yams with pineapple bits and pecans.
Top with miniature marshmallows.
Bake at 325 degrees until heated through and marshmallows are bubbly.
Note: You may want to cut back on the ginger, I only used 1 teaspoon.

Grease and flour 4 mini loaf pans or round casserole. In medium bowl, beat egg with sugar until fluffy. Stir in flour, baking powder and salt and blend. Add dates, cherries, and pineapple. Wet your hands and pack into pans. Bake at 300F for 35-40 minutes. Top should be dry, but not brown. Melt jelly, add bourbon and while cakes are still warm, spread mixture over cakes, Wrap tightly. Keep in refrigerator or freezer. Best if you can make this a week or two before serving. Family favorite for many years.

Wash and bake your yam.
Mash with a hand mixer or potato masher.
Add butter, sugar, and cream.
Mix.
Place in a small casserole dish.
Top with marshmallows.
Broil for about 5-10 minutes or until the marshmallows are golden brown.

Yummy Yam Casserole

Preheat oven to 350.
Whip together \"yam\" ingredients and pour into a 9x13 glass baking dish.
Mix \"topping\" ingredients until it resembles coarse crumbs and drop over top of yam mixture.
Bake for 30 minutes.
To freeze: Assemble casserole as directed up to the point of baking. Cover well with foil. Label and freeze.
To serve: Thaw in fridge, uncover and bake as directed.
