Place bologna and pickles in a food processor fitted with the chopping blade.
Process until they are finely chopped.
Add mayo and pulse until well incorporated into mixture.

Slice the bologna into 1/8-inch strips.
Oil a flat top grill and cook the bologna on it until it crisps nicely.
Saute the onions on the flat top until caramelized.
