Bisquick Zucchini Nut Muffins

Heat oven to 400\u00b0F.
In a small mixing bowl, mix the dry ingredients.
In a larger bowl, mix the milk, oil, egg, vanilla, and zucchini with a large spoon.
Then very gently stir the dry ingredients into the liquid ingredients just until moistened. Do NOT over-stir, or they will be dry and tough.
Divide batter evenly among cups.
Bake until the tops spring back when pressed gently in the center, about 13-18 minutes. Do not over-bake.
Cool in the pan on a wire cake rim for 10 minutes before removing from cups.

Speedy Taco Bake

Brown hamburger and onion; drain off fat.
Add taco seasoning, salsa and corn.
Stir together and put in a 9 x 13-inch pan. Sprinkle cheese over that.
Mix Bisquick or Recipe Ease, eggs and milk together.
Pour over other mixture and bake at 350\u00b0 for 30 minutes or until golden brown.

Lucille'S Zucchini Recipe

In a large skillet, melt oleo.
Add onion, green pepper, corn (if using fresh, cut off the cob) and zucchini.
Cook 8 to 10 minutes.
If using canned corn, add now with basil and pepper. Heat thoroughly.
Add cheese; heat again.
Serve garnished with sliced tomato.

Zucchini Patties

Combine Bisquick, cheese, salt, eggs, zucchini and onion in a mixing bowl.
Blend well. Melt butter in a large skillet.
Spoon heaping tablespoons of zucchini mixture into skillet.
Fry for 3 to 5 minutes per side, until golden brown.
Place browned patties on a paper towel.
Add more butter to skillet when necessary for additional batches.
Serves 5 to 6.

Zucchini Cornbread Muffins

Preheat oven to 400\u00b0F. Line a 12-cup muffin pan with paper liners.
Mix together Bisquick, cornmeal, sugar and wheat germ. Whisk together buttermilk, Egg Beaters and melted butter then stir into dry ingredients. Fold in zucchini and scallion. Distribute between muffin liners and bake for 15 mins, or until lightly browned. Serve warm.

Lo-Cal Zucchini Puff

Stir together eggs, oil and oleo and add to Bisquick.
Mix in rest of ingredients and 1/2 of the cheese.
Pour into a 2-quart casserole sprayed with Pam.
Top with remaining cheese.
Bake at 350\u00b0 for 50 to 60 minutes.
Very good! Stuffing-like recipe.

Cheeseburger Zucchini Pie

Turn oven to 400.
Spray a 9-inch Pan.
Scrambled the ground beef, then saute the onion with the zucchini for 6 minutes, season with salt and pepper.
Spread the mixture in the pan, put the cheese on top.
Mix the bisquick, milk and eggs then pour over the ground beef mixture.
Cook for 25 minutes.

Zucchini Appetizer

For this ultra-simple recipe, use jumbo Spanish onions, sliced to 1/8 inch thick (#2 or #3 on a slicing machine).
Separate the circles into rings and toss with all-purpose flour.
While tossing, sprinkle the onions with light cream to moisten them.
Keep tossing them all together until they are well-coated.
Deep fry in vegetable shortening and drain well.

Zucchini Pizza Squares

Mix together and set aside Bisquick, oregano and Parmesan. Mix together and set aside zucchini, pepperoni, Cheddar and garlic.
Beat eggs; stir in oil.
Add to Bisquick mixture and blend together.
Add zucchini mixture and stir until well blended. Spread in 9 x 13-inch lightly greased pan and bake for 30 minutes at 350\u00b0 or until top is golden brown.
Sprinkle Parmesan on top right out of oven if desired.

Mix all ingredients in one bowl.
Butter 9-inch glass dish. Bake at 350\u00b0 for 40 minutes or until golden brown.
Double recipe for 9 x 13 pan.

Joan'S Zucchini Pie

Mix all ingredients.
Pour into a pie pan.
Bake at 350\u00b0 for 25 minutes.
If doubling recipe, pour into a 13 x 9-inch pan.

Zucchini Casserole

Layer 1/2 of the sliced zucchini in 9 X 13-inch pan.
Put 1/2 of the browned hamburger on top. Repeat with remaining zucchini and hamburger. Sprinkle 1/4 cup Bisquick on top. Pour 2 cups spaghetti sauce on top. Mix together 1 beaten egg to 1 cup cottage cheese. Stir in 1 cup Bisquick. Pour mixture into pan and cover top. Bake 350\u00b0 for 30 minutes.

Note:
If you double recipe, use 13 x 9-inch pan.

Zucchini Quiche

Mix all ingredients in a large mixing bowl.
Pour into 9 x 13-inch buttered (Pam works well) baking dish.
Bake 30 to 35 minutes at 350\u00b0.
May be served hot or cold.
Add chopped peppers and/or mushrooms for variety!
Recipe doubles for taller result but is still fluffy.
Serves 6 to 8.

Sprinkle top with garlic salt.
