Preheat oven to 425 for cornbread.

FOR THE BATTER ~ In large bowl
Combine flour, sugar, oats and cinnamon; cut in margarine. Lightly toss 1 cup crumb mixture with yams and cranberries. Arrange mixture in 1 1/2-quart casserole.

Bake at 350\u00b0 for 35 minutes.
Remove from oven, then sprinkle with marshmallows.
Put under broiler until light brown.
Excellent for Thanksgiving, Christmas and any time with turkey.

Throw everything in a pot and boil for about 10 minutes, saving shrimp until last (if you are using shrimp--I often just make this vegetarian).

To make Tom Yam instead of Tom Ka, do everything the same, except substitute more chicken stock to replace the coconut milk.
Place mashed yam in a pan/wok.
Peel vegetable(s), cut into pieces and steam or boil until half cooked.
Cool and cut into 1/2\" cubes. Heat butter and oil in large pot or fry pan.
Add ginger and garlic and stir-fry over low heat for 2-3 minutes.
Add the prepared vegetables and spices, tossing the spices until well mixed before adding.
Put a lid on the pan and steam for a few minutes.
Season to taste.
Wash and slice mushrooms. Dice onion. Cut yam into 1-inch pieces. Place mushrooms and onions in a pan sprayed with PAM, cover, and sautee over medium-high heat, stirring occasionally for about 5 minutes. Add all spices and reduce heat to low-medium. Add the yam pieces and cook 5-10 minutes, stirring occasionally and adding a little water if it gets too dry. Cook until the yam is just getting tender and all of it is moist but not watery.
Place yam into a large pot and
grater to grate the yam into a bowl.
