Remove center of sweet potatoes, leaving boat-shaped center. Mix centers and other ingredients together.
Refill potatoes and bake at 350\u00b0 for 10 to 15 minutes.

Combine the mashed sweet potatoes with the butter, brown sugar
Wash & cut the sweet potatoes in 1/2-inch thick slices, then steam them for 8 minutes or until just fork tender.
Preheat the oven to 450 degrees F & butter an 8\"x8\" baking dish.
Layer the sweet potatoes in the baking dish, sprinkling each layer with a small amount of salt, pepper, brown sugar & butter (using just half of the butter for this purpose).
Cover the top layer with the bread crumbs & the rest of the butter & bake for 20 minutes or until well browned.
Cut sweet potatoes in half.
Scoop out potatoes, leaving thick shells.
Mash potatoes with other ingredients.

Combine sweet potatoes, 1 cup sugar, milk, butter, eggs and vanilla.
Blend well by hand or mixer.
Pour into baking dish.
Note: Substitute canned sweet potatoes and pineapple, if desired
With a mixer, blend the sweet potatoes, margarine, sugars, honey, 1 cup of pecans, 1/2 cup of coconut and orange juice, still frozen.
Whip all the ingredients until smooth.
Pour into glass baking dish.
Take the rest of the pecans and coconut and spread over the top.
Bake at 325\u00b0 for 45 to 60 minutes until firm. Remove and garnish top with marshmallows.
Return to oven until marshmallows are melted.

Orange-Baked Sweet Potatoes:
Peel sweet potatoes and chop into pieces

Scrub the sweet potatoes clean. Pat dry and prick
lectric mixer, beat together the sweet potatoes, 2 tablespoons of the butter
Wash the yams/sweet potatoes and pat dry with a paper towel.
Lightly oil the skins of the yams/sweet potatoes with the olive oil.
Bake at 400 degrees for approximately an hour, or til tender.
Carefully peel the skins off of the sweet potatoes and serve with butter.

Prick sweet potatoes with a fork and place
Preheat the oven to 400\u00b0F. Cut the sweet potatoes in half lengthwise. Place on a foil-lined baking pan. Drizzle with 1-2 tbsp of the oil and season to taste. Bake for 30-40 mins, until tender.
Mix the tuna, onion, cilantro, chili pepper, lemon juice and remaining 2 tbsp oil in a large bowl. Season to taste.
Place potato halves on 4 plates. Top each with tuna salad and a dollop of sour cream. Serve sprinkled with black pepper and garnished with cilantro leaves.
