Baked Sweet Potatoes With Tuna, Onions And Sour Cream - cooking recipe

Ingredients
    4 small sweet potatoes
    4 tbsp olive oil
    2 cans (5 oz each) tuna packed in oil, drained and flakes
    2 small red onions, very thinly sliced
    2 tbsp chopped cilantro, plus additional leaves, for garnish
    1 None red chili pepper, seeded and chopped
    1/2 None lemon, juiced
    2/3 cup sour cream
Preparation
    Preheat the oven to 400\u00b0F. Cut the sweet potatoes in half lengthwise. Place on a foil-lined baking pan. Drizzle with 1-2 tbsp of the oil and season to taste. Bake for 30-40 mins, until tender.
    Mix the tuna, onion, cilantro, chili pepper, lemon juice and remaining 2 tbsp oil in a large bowl. Season to taste.
    Place potato halves on 4 plates. Top each with tuna salad and a dollop of sour cream. Serve sprinkled with black pepper and garnished with cilantro leaves.
