Shelly'S 5 Minute Sugar Free Apple Cinnamon Cake

In a measuring cup or microwave safe mug, mix egg, milk, syrup, applesauce and oil and combine thoroughly.
In a separate bowl, mix pancake mix, cinnamon, nuts, raisins, protein powder and salt.
Tip dry ingredients into wet ingredients and stir till combined.
Microwave for 2 minutes. Let it sit for three or so minutes (it pulls away from the sides) before tipping the cake onto a plate. Yields 4-5 slices.
I topped it with Land O Lakes Sugar Free Whipped Cream, a drizzle of Smuckers Sugar Free Caramel Sauce and some chopped nuts.

Sugar Free Berry Fruit Sauce

In a saucepan mix berries, splenda, water and lemon juice.
Bring to a boil, then lower heat and simmer for 10 minutes.
Remove from heat; cool If using berries with seeds strain through a fine sieve into a bowl, pressing down to catch all liqiuds.
Discard seeds and solids.
Cover and chill in refrigerator for 30 minutes.
This can be reheated if topping something warm.

Sugar Free Turtle Pumpkin Pie

POUR 1/4 cup Sugar Free caramel topping into crust; sprinkle with 1/2 cup pecans. BEAT milk, pudding mixes, pumpkin and spices with whisk till blended. Stir in 1 tub SF COOL WHIP. Spread into crust.
REFRIGERATE at least 1 hour. Top with other tub COOL WHIP, Sugar Free caramel topping and pecans just before serving.

Sugar-Free Popsicles

Combine complimentary flavors of sugar-free Jello and Kool-Aid in a 2-quart container and mix in boiling water.
Stir until the Jello is disolved.
Add cold water to make 2 quarts.
Pour into popsicle molds or dixie cups (with wooden craft sticks) and place in freezer until frozen.

Make pudding, using 3 cups cold milk.
Beat approximately 2 minutes.
Add sugar-free peanut butter to taste.
(I usually use 1/2 to 3/4 cup).
Can add cream cheese or leave out.
Fold in 1 small container of Cool Whip.
Mix until smooth and chill.

Sugar-Free Finger Jello(Dietetic)

In a large bowl, combine unflavored gelatin and sugar-free Jell-O.
Add 3 cups of boiling water and stir until Jell-O dissolves.
Pour into a large, shallow pan (13 x 9-inch) and chill until firm.
Cut in squares to serve.
Yield: about 100 (1-inch) squares.
