California Roll Up (South Beach Diet Phase 1)

Top each lettuce leaf with turkey and ham, 1 slice tomato, 1 slice avocado, 1 t lime juice, a few leavevs of arugula or watercress and 1 Ranch dressing.
Roll up leaves, secure with toothpicks.

Swiss Steak (South Beach Friendly)

Saute steaks on medium high with the olive oil in an oven proof skillet until browned on both sides, remove from heat.
Add diced celery and diced tomatoes.
Cover and bake at 350 degrees F for 30-45 minutes. (Depending on the size of your meat.) Check after 20 minutes, you might want to leave the lid off at this point if you like a thicker sauce.
If you're on phase two of the south beach diet serve with whole wheat egg noodles.

Reuben Wrap (South Beach Diet Phase 2)

South Beach Asian Cole Slaw

Mix dressing, peanut butter and soy sauce in a large bowl with a wire whisk until well blended.
Add coleslaw mix; toss to coat. Cover.
Refrigerate several hours or until chilled.
Top with peanuts just before serving.

Roast Beef And Horseradish Roll-Up (South Beach Phase 1)

Combine horse radish and mayonnaise.
Spread mixture on lettuce leaves.
Top with roast beef and watercress.
Roll up leaves, securing with toothpicks, and serve.

Warm a small frying pan over medium heat with 1 TBS of butter or spread. If using unsalted spread, I recommend adding the tiniest bit of sea salt - it gives the outside a nice complimenting flavor.
Combine egg, clove, nutmeg, cinnamon, and vanilla extract in a bowl - use a fork to whip together.
Once butter or spread starts to bubble, pour in the egg mixture.

In a large nonstick skillet, heat oil over medium-high heat. Add egges, reduce heat to medium, and scramble until cooked but still moist, about 2 minutes. Transfer to a plate and season with salt and pepper.
Carefully wipe the pan with a paper towel and return to medium heat. Add tortilla and cook on both sides until warmed through, abotu 1 minute.

French Green Beans Sautéed With Mushrooms And Almonds

Heat oil over medium heat.
Saute garlic until soft, being careful not to let it burn.
Add sliced mushrooms and saute until they look fairly cooked and shiny (about 5 minutes).
Add almonds and saute for a couple more minutes.
Finally, add frozen green beans and splash of soy sauce.
Stir frequently until beans are just cooked and, of course, no longer frozen.
If not on the south beach diet or watching sugar intake, you could add oyster sauce or other Asian condiment to the mixture.

Blue Cheese Dressing (South Beach Diet Phase 1)

Whisk together mayonnaise, blue cheese, lemon juice, and hot pepper sauce. Whisk in buttermilk and season with salt and pepper to taste.

Mexican Jumping Beans (South Beach Diet-Phase 1 Friendly)

In a medium saucepan, sautee the pepper, onion and garlic in olive oil until crisp-tender.
Add beans, water and seasoning; simmer on low to medium heat until thickened (about 10 minutes).

Chili Rubbed Flank Steak With Onion Relish (South Beach Diet)

Rub steak with 2 t. lime juice and 2 t. chili powder, then sprinkle with salt. Let sit while you prepare the relish.
Combine onion, cilantro, remaining 5 t. of lime juice and 1/2 t. of chili powder.
Broil or grill steak about 7 minutes (medium-rare) per side until desired doneness.
Remove steak from heat and let sit at least 5 minutes (VERY IMPORTANT).
Cut steak at an angle against the grain. Serve topped with onion relish.

Spaghetti Squash Casserole (South Beach Diet P1)

Pierce the squash in several places, put on a plate and microwave until tender (mine took about 20 minutes).
Allow cool while you cook the meat and veggie mixture.
Brown meat with garlic, onion, salt and pepper, and bell pepper.
Drain and add Italian spice and tomatoes.
If it seems really liquidy, cook some of the liquid off.
Cut the squash in half and scrape out the seeds and discard them.
Use a fork to scrape the spaghetti into strands and mix gently with sauce mix.

In medium saucepan, heat oil over medium heat. Add onions, celery, garlic, basil, oregano, and pepper flakes. Cook, stirring occasionally, 5 minutes.
Add mushrooms, squash. Cook, stirring occasionally, 5 minutes more.
Stir in beans, diced tomatoes and their juices, tomato sauce, and water. Bring to a simmer and cook briefly just to heat through.

Baked Sweet Potato Chips (South Beach Diet Phase 2)

Heat oven to 400.
In a large bowl, toss potatoes with oil and seasonings. Spread in a single layer on two large baking sheets and bake for 10 mintues.
With a spatula, turn slices over and continue baking until chips are golden, about 7 minutes longer.
