Put sauerkraut and water in pot and start cooking.
Peel and shred potatoes. Add them to the sauerkraut, cooking on low. Cut the bacon in small pieces and fry until brown.
Add to sauerkraut. Put onion in skillet with bacon drippings and cook until clear. Add flour and cook a little longer.
Put onion/flour mixture into sauerkraut.
Mix well.
Continue cooking until potatoes are done.
Rinse sauerkraut with warm water in colander, drain well. Place in heavy saucepan or pot with the butter and seasonings (salt, pepper, caraway seed, juniper berries, onion, apple, whatever you like).
Cover pan tightly, simmer over lowest heat 15 to 30 minutes.
