Combine peach chunks, sugar, and lemon juice.
Allow to sit 30 minutes.
Bring to a boil, stirring in sugar until dissolved.
Reduce heat to low, cover and cook 15 minutes.
Remove from heat and allow to cool.
Pour through a strainer, pressing solids to extract flavor and juices.
Chill and discard solids.
Place about 1 tbsp of the peach syrup in a flute and fill with champagne.
Garnish with a peach slice and mint sprig.

Peach Bellini

Add a few frozen peach slices and liquor to blender and puree. The mixture should be taking on a slushy type texture.
Taste and add more liquor or peaches as needed. Add ice and continue to blend until a nice frozen texture is acquired. Pour into glasses and garnish with peaches.

Healthy Peach (Or Other Fruit) Freezies

Place peaches, nectar, sugar, and extract in food processor and process till smooth.
Spoon 2 tablespoons mixture into each ice cube tray section and freeze until almost firm. Insert a toothpick and freeze until completely firm.
APRICOT: Sub in apricot halves and nectar for peach
PEAR: Sub in pear halves and nectar for peach and almond extract for coconut extract.
PINEAPPLE: Sub in crushed pineapple and unsweetened pineapple juice for peach
MANGO: Sub in fresh mango and nectar for peach and omit coconut extract.

Easy Peach Punch

Non-Alcohol Version: omit schnapps and vodka. Replace with 1 1/2 cups peach nectar.
Combine all ingredients in a pitcher. Refrigerate covered until cold. Serve over ice in tall glasses or fill a small punch bowl. Double or triple the recipe for a large bowl.
If serving in glasses, put a small scoop of vanilla ice cream or orange sherbet on top. Float scoops on top of frozen juice rings in the punchbowl.

Melt butter, brown sugar and corn syrup.
Pour into a 13x9 dish, place bread slices on top of melted mixture.
Mix remaining french toast ingredients and pour over bread slices.
Cover with plastic wrap and refrigerate overnight.
Before cooking, allow to come to room temperature (about 30 minutes).
Bake for 30-35 minutes in a 350 oven.
Serve with Peach Topping.
Combine ingredients for peach topping in saucepan.
Heat on medium until heated through.

Heat the oil in a large saucepan and cook the onion and garlic over low heat for 6-7 mins until softened. Add the rice mix and cook, stirring for 1 min.
