For the Pesto Caesar Salad Dressing: Whisk together all ingredients
Arrange spinach on serving plate.
Add mushrooms and vegetables.
In nonstick frying pan, saute chicken pieces in salad dressing just until cooked, 5 to 8 minutes.
Spoon over spinach and drizzle with pan juices.
Add a few herbed croutons on top.
Wash and dry lettuce.
Tear or cut.
Place into a large salad bowl.
Sprinkle lettuce with a generous amount of the cheeses and croutons.
Just before serving, toss with salad dressing.
Serves 4 to 6.
