Chicken Caesar Salad - cooking recipe

Ingredients
    4 chicken breasts, fat removed and cut into bite size chunks
    1/2 c. Caesar salad dressing (Ken's Caesar lite)
    1 lb. fresh spinach, washed and broken for salad
    1/4 lb. fresh mushrooms, washed and sliced
    1 small onion, sliced (optional)
    1 medium tomato in chunks (optional)
Preparation
    Arrange spinach on serving plate.
    Add mushrooms and vegetables.
    In nonstick frying pan, saute chicken pieces in salad dressing just until cooked, 5 to 8 minutes.
    Spoon over spinach and drizzle with pan juices.
    Add a few herbed croutons on top.
