Combine flour, oats, sugars, baking soda, baking powder, cinnamon, and salt; mix well.
In another bowl, combine mashed bananas, oil, applesauce, eggs, and vanilla; mix well.

Pour into 9 x 5 loaf pan thinly coated with cooking spray.
Sprinkle a thin layer of quick oats on top of the batter.

VARIATION: QUICK CHEESE BREAD WITH BACON, ONION, AND

Mash or beat potatoes and water until smooth.

Bake rolls 20 to 30 minutes at 400.
Bake loaves of bread 35 to 45 minute.
*To make this bread in half the time, substitute 2 packages quick-rise active dry yeast for regular dry yeast.
Cut the rising times in half and bake as directed.

Prick the potato all over with a fork. Microwave on high for 3 mins. Turn; microwave for another 2-3 mins until tender when tested with a knife. Cut into 6 wedges.
Arrange the potato wedges in a microwave safe bowl and season to taste. Pour over the baked beans and sprinkle with cheddar.
Microwave on high for another 2 mins, until piping hot in the middle and the cheese has melted.
Serve garnished with parsley.

BASIC BREAD:
Mix the flours, salt
