In large pot combine broth, water, beer, spaghetti sauce, celery, onion, olive oil and sun dried tomatoes. Simmer for approx. 10 minutes or until celery is softened.

Add Halibut chunks (and scallops) and simmer until white and firm, about 2 or 3 minutes. Add crab meat and shrimp. Stir. When shrimp turns pink about 1 minute remove from stove and garnish with basil.

Classic Italian Crab Cioppino

Heat the olive oil in a deep, nonaluminum pot and saute the onion until it starts to soften.
Stir in the chopped tomatoes, oregano, basil, bay leaf, white wine and half the garlic.
Simmer 30 minutes.
Add the remaining garlic, crab, salt and pepper and cook until the crab is hot.
Remove the bay leaf and serve in warmed soup bowls with crusty sourdough bread.
Serves 4.

Heat oil in saucepan.
Add garlic and saute until garlic is browned.
Add onion, wine, bay leaves and oregano.
Cook 10 minutes over low heat.
Add crushed tomatoes and sugar.
Season to taste with salt.
Simmer 20 minutes, adding more wine if it evaporates too quickly.
Add crab, clams, prawns, shrimp and crab meat.
Cook until clams open, about 10 to 15 minutes.

Clean shrimp, clams, and crab and cut fresh fish in bite-size pieces.
Saute onion and pepper in oil.
Add tomatoes with juice and wine, basil and mushrooms (that have been soaked in warm water).
Steam the clams, add the water from the clams and simmer 15 minutes.
Add shrimp, crab and fish.
Add oregano, salt and pepper and cook over low heat for 10 minutes.
Serve with Dino's French bread.

Bodega Bay Cioppino

Heat olive oil in a very large heavy pot over medium-high heat. Add onion and garlic, and cook until soft, stirring frequently. Pour in tomatoes and white wine, then season with parsley, basil, salt, pepper and the bay leaf. Reduce heat to medium-low, and simmer until liquid is reduced almost completely, about 1 hour.
Add clams, scallops, clams, crab legs and shrimp to the pot. Cover, and cook over medium heat until clams open. Scoop portions into large bowls to serve.

Mad Cioppino

In large pot (medium heat) in olive oil, cook onion, green pepper and garlic until tender (5 minutes).
Add tomatoes, wine, parsley, salt, basil, pepper and bay leaf.
Heat to boiling. Reduce to low; cover and simmer 15 minutes.
Increase to medium heat.
Add clams; cook 10 minutes (stirring occasionally).
Add crab, shrimp, scallops and fish.
Cook 5 minutes or until shrimp turn pink and scallop loses transparency.
Serve with hot French bread.
