Quick Mock Cioppino - cooking recipe
Ingredients

1 can low fat chicken broth
1 can water
1 cup beer
1 cup prepared vegetarian spaghetti sauce
1 clove garlic minced
2/3 cup thinly sliced celery
2/3 cup minced onion or leek
6 halves sun dried tomatoes cut into thin strips
1/2 tbs olive oil
3 large fresh basil leaves finely chopped
1 thick halibut steak cut in 1 inch squares. (Be sure to remove all skin and bone).
1 cup shrimp (cooked or uncooked)
1 cup cooked crab meat (or scallops cut in fourths)
Preparation

In large pot combine broth, water, beer, spaghetti sauce, celery, onion, olive oil and sun dried tomatoes. Simmer for approx. 10 minutes or until celery is softened.
Add Halibut chunks (and scallops) and simmer until white and firm, about 2 or 3 minutes. Add crab meat and shrimp. Stir. When shrimp turns pink about 1 minute remove from stove and garnish with basil.
