Dredge in corn meal mixture to coat well.
Okra should be moist in order for corn meal to adhere.
If necessary, rinse okra again in water before dredging.
Spread okra in a single layer in prepared pan.
Bake for 30 to 40 minutes or until crisp, stirring occasionally.

Heat oil in large saucepan and cook chicken, in batches, until browned. Remove from pan. Cook onion and garlic in same pan, stirring, until onion softens. Add tomato paste and cayenne pepper and cook, stirring, 1 min. Return chicken to pan along with tomato puree, stock and 1 cup water. Bring to a boil. Reduce heat and simmer, covered, 40 mins. Wipe the jar rims and cover at once with the metal lids and screw-on bands.
