Add the rice and cook about 3 minutes, stirring frequently or until lightly brown.

Heat to boiling, reduce heat; cover and simmer until rice is tender.
Add the okra, cover and simmer 10 minutes longer or until okra is tender.

Combine corn meal, salt and pepper.
Wash okra; drain.
Trim ends and cut into 1/2 inch slices.
Dredge in corn meal mixture to coat well.
Okra should be moist in order for corn meal to adhere.
If necessary, rinse okra again in water before dredging.
Spread okra in a single layer in prepared pan.
Bake for 30 to 40 minutes or until crisp, stirring occasionally.

a boiling water bath. Let pickles stand at least 5
weeks before opening. This is really hot. You may
want to cut the amount of spices used.

Heat oil in large saucepan and cook chicken, in batches, until browned. Remove from pan. Cook onion and garlic in same pan, stirring, until onion softens. Add tomato paste and cayenne pepper and cook, stirring, 1 min. Return chicken to pan along with tomato puree, stock and 1 cup water. Bring to a boil. Reduce heat and simmer, covered, 40 mins. Add okra and simmer, uncovered, 15 mins or until chicken is cooked through and okra is tender. Season to taste and serve.
Pack okra in 9 hot jars filling to 1/2 inch from top.
Place 1 hot pepper, 1 garlic clove, and 1 teaspoon dill into each jar.
Bring the vinegar and remaining 3 ingredients to a boil; pour over the okra filling to 1/2 inch from the top. Remove any air bubbles.
Wipe the jar rims and cover at once with the metal lids and screw-on bands.
