Sift flour and castor sugar into a medium size bowl.
Stir in milk, egg and combined tasy cheese and parmesan cheese and mix well to combine.
Spoon tablespoons mixture in a heated greased pan, cook until bubbles appear on the suface of the hotcakes, turn and cook on the other side until lightly browned.
Using an egg slice, remove hot cakes from the pan, and place on a tray lined with absorbent paper. Repeat with remaining cheese mixture to make more hotcakes.
Serve spread with butter.
Combine in the order given.
Fold in egg whites last.
This is a sweeter than usual hotcake recipe; sugar can be reduced if desired.
Beat eggs.
Add buttermilk and melted butter.
Stir.
Sift dry ingredients together and add to milk mixture.
Mix only until dry ingredients are blended.
Bake on a hot greased griddle.
Makes 12 to 14 hotcakes.

In a bowl, combine all dry ingredients.
In another bowl, whisk egg yokes, oil, buttermilk and vanilla.
Pour into dry ingredients, stirring until moistened.
Beat egg whites on high speed until soft peaks form.
Fold dry ingredients into batter. Fry on hot griddle (will take longer to cook than normal pancakes).
Yields about 12 hotcakes.
When making hotcakes from the starter taken from previous batch, mix starter, flour and water only using the same amount of flour and water (can add more for larger batch or less for small batch as it is not critical as to amounts) and about 1 1/2 to 2 tablespoons sugar.
Next morning take out starter for next time before adding rest of ingredients.
