Melt butter in a large saucepan set over medium high heat.
Add mushrooms, stir frequently until mushrooms are brown-tinged, 5-9 minutes.
Add turkey and sprinkle with poultry seasoning, salt and pepper.
Add turkey sauce and boil stirring often.
Stir in sour cream and simmer over low heat, 1-2 minutes.
Add cooked pasta to turkey mixture in pan.
Stir gently to mix well.

Pre-heat panini grill to medium-high. Warm leftover turkey and stuffing in the microwave.
Butter 1 side of each slice of bread, lay butter-side down on your work surface.
On one slice of bread, layer ingredients in the following order: 1 slice cheese, turkey, stuffing, black pepper (if desired), 1 slice cheese, top piece of bread, with buttered sides facing out.
Place assembled sandwich on the hot grill, and close, pressing down for about a minute to consolidate ingredients. Continue cooking for a few minutes, until golden brown.
Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
