Heat up a wok or pan over medium heat. Add the oil.
Add kimchi and stir-fry for 1 minute.
Add rice, kimchi juice, water, and gochujang. Stir in all ingredients and fry for 6-8 minutes with a wooden spatula.
Lightly beat the eggs in a small bowl. Push the rice to the side of the wok/pan, then add eggs and quickly use spatula to stir them into small scrambled pieces. Stir the egg pieces into the rest of the rice.
Add sesame oil and immediately remove wok/pan from heat.

Cucumber Kim Chee

Peel and seed cucumbers.
Slice thinly and sprinkle with salt.
Let stand 15 minutes.
Rinse and drain.
Toast sesame seeds in a skillet over medium heat; watch closely as they burn quickly. Stir often.
Combine sesame oil, sesame seeds, garlic and cayenne.
Toss with cucumbers.

Wash cabbage and cut into large pieces.
Add 1/2 cup salt to water.
Mix well and soak cabbage for 5 hours.
Wash and drain cabbage thoroughly.
Add all other ingredients into jar.
Cover and place in cool place for 2 or 3 days until pickled.
Makes 1 quart.

Head Cabbage Kim Chee

Shred cabbage.
Mix with crushed garlic.
Add remaining ingredients according to taste.
Let mixture sit overnight in refrigerator.

Kim Chee Squats

Place the cabbage into a large dish, and sprinkle with salt. Let stand for 3 to 4 hours. The cabbage will wilt.
After the cabbage has been sitting, massage it with your hands until it is even softer. Drain off the liquid. Mix in the green onion, garlic, chili powder, ginger, soy sauce, vinegar, and sugar. Transfer to a large glass jar, and refrigerate for 24 hours before using. This will keep for about a week in the refrigerator. Sprinkle with sesame oil before serving.
