Cucumber Kim Chee - cooking recipe
Ingredients

2 medium cucumbers
2 Tbsp. salt
6 green onions
1/2 clove garlic
1 Tbsp. red pepper
1 Tbsp. sugar
Preparation

Peel cucumbers and rub with salt under running water.
Slice cucumbers into thin slices and sprinkle with 2 tablespoons salt. Mix well and place in refrigerator overnight.
Strain cucumbers under running water.
Be sure to rinse all salt off.
Dry cucumber slices with paper towels.
Chop green onions and garlic finely and mix with cucumbers.
Mix 1 tablespoon ground red pepper with a small amount of boiling water.
Add to cucumber mixture.
Add 1 tablespoon sugar; mix well.
Kim Chee is ready to eat.
This dish can also be prepared using cabbage.
