"Eat The Pan" Meat Loaf

Cut the zucchini in half lengthwise and scoop out the center. Prepare your meat loaf recipe as usual.
Mound the meat loaf in the zucchini halves.
Bake according to meat loaf recipe.
Remove from oven and serve.
There's no clean-up because you can eat the \"pan.\"

Stuffed Peppers

Preheat the oven to 350\u00b0. Add cheese to Basic Meat Loaf recipe. Cut peppers in halves and stuff with meat mixture.
Pour Marinara Sauce over them and bake 1 hour.

Meat Loaf Surprise

Make your favorite meat loaf. Put in deep baking dish. Meat loaf should be no more than 3-inches thick. Put soup on top of meat loaf; smooth out. Mix peas and corn together; pat on top of soup. Top with hash browns or tater tots.

Asian Lentil Loaf

Heat over to 350\u00b0F
Cook lentils in water until soft and water has been absorbed.
Meanwhile, saute the onion, garlic and zucchini in oil until soft. Mix in a large bowl with the remaining ingredients.
Form the mixture into a loaf shape and place on a greased baking sheet OR place mixture in a greased baking pan (bread loaf size).
Bake for 30 minutes, cut into slices, and serve.

Cream butter and sugar in bowl. Beat in eggs, one at a time until smooth. Stir in pumpkin. In another bowl, combine just until moistened. Spoon into 9 x 5 x 3 \" loaf pan. Bake at 350 for 1 hour until tested done. After 10 minutes cooling time, turn loaf out on to cooling rack. Makes 1 loaf.

Mix all ingredients at once, adding nuts and chips last.
Fill pans a little over 1/2 full.

Harvest Time Meatballs

Prepare the basic meatballs recipe #8060 and set aside.
Melt the margarine in a large skillet.
Add the garlic, thyme leaves, mushrooms, and zucchini; cook over medium-high heat for about 5 minutes, stirring occasionally.
Add the cooked meatballs; cover and simmer, stirring occasionally, until the vegetables are tender, about 10 minutes.
Sprinkle with the salt and cheese.
Add the tomato wedges, cover and heat for 2 to 3 minutes.
Serve over rice for a complete meal.
