Preheat oven to 350 degrees and lightly grease a 2 qt casserole; set aside.
In small skillet over med heat melt butter and saute onions and celery 4 to 5 minutes or until soft; place sauteed vegetables in a mixing bowl and let cool slightly.
Add remaining ingredients, except cracker crumbs and melted butter, to bowl and toss gently, but well to mix.
Transfer to prepared casserole.
Stir crumbs and melted butter together and layer them on top of casserole.

Great Northern Italian Casserole

Sort and rinse beans.
Cover with water and cook until barely tender, about 1 to 1 1/2 hours.
Drain.
Pour beans into a 2-quart casserole.
Reserve liquid from beans.
Lightly brown sausage in oil.
Add onion, garlic and celery.
Cook until tender.
Add seasoning, tomato paste, 2 cups bean liquid and salt.
Pour over beans.
Stir.
Cover.
Bake at 350\u00b0 for 1 hour.
Add more bean liquid if necessary.
Top with cheese and brown lightly.

Three Bean Casserole

Drain liquid from lima, kidney and Great Northern beans. Combine sugar, catsup, Worcestershire sauce, salt, cheese and onion.
Mix with beans.
Bake for 1 hour in a buttered 2-quart casserole at 350\u00b0.
Makes 6 to 8 servings.

In a 2-quart covered casserole, arrange 1 layer sliced potatoes, 1 layer onions (sliced), 1 layer crumbled raw lean ground beef and salt and pepper to taste.

Pour tomato sauce over top.
Sprinkle chili powder and garlic salt on top.
Cover and bake 2 hours at 300\u00b0.
Check for doneness after 1 1/2 hours.
Top with cheese in last few minutes of cooking.

Soak beans overnight or at least 2 hours.
Rinse and cook until fork-tender.
Drain.

Drain off any excess oil.
Add tomatoes and tomato sauce.
In a casserole dish, layer beans, meat mixture and cheese.
Continue to layer until casserole dish is full.
Spread topping of cheese on top and bake in 350\u00b0 to 375\u00b0 oven for 20 minutes or until cheese is melted.
Let cool and serve warm or cold.

Salmon And Rice Casserole

Set oven to 350 degrees F.
Grease casserole dish.
Melt margarine.
Add flour& salt and cook for 1 minute while stirring.
Remove from heat.
Add milk gradually, return to heat and cook and stir until thickened.
Stir curry powder and worcestershire sauce into sauce.
Break salmon into chunks and add to sauce.
Add cooked rice.
Pour into greased casserole.
Sprinkle cheese on top.
Bake at 350 degrees F for 30 minutes.

Breakfast Casserole

In a 9 x 13-inch casserole dish spread crescent rolls on the bottom.
Crumble cooked sausage over rolls.
Spread hash browns then the cheese over sausage.
Mix eggs, milk and salt and pepper. Pour over casserole and bake at 375\u00b0 for 35 to 45 minutes.\tMake sure it is brown.
I usually make this the night before and pour the egg/milk mixture over the rest of it prior to baking.
This is a great casserole for Christmas morning!
