Spread the chips out on a cookie sheet or 9X13\" pan. Sprinkle with the seasoning, Gently stir and coat all chips lightly.
You can also open the bag, sprinkle the seasoning in onto the chips, fold the top back closed (tightly) and turn the back upside-down and right-side up again, gently till all chips are coated. If you do this, invert the bag at least 20 times to get a good even coating.
Brown meat (drain grease).
Cut up vegetables.
Put everything in a pot and boil on stove around 3 hours covered(crock pots also work, but I've found it doesn't turn out as good. It is always better heated up the next day).

Saute the onion and celery in the butter until tender. Add mushrooms if you would like!
Combine all ingredients in a large bowl; mix well. I use a healthy sprinkling of poultry seasoning -- that is what makes it smell soooo good while cooking!
Place into a 13x9x2 inch baking dish.
Bake at 350 degrees for 25 to 30 minutes.
If dressing begins to look too dry, add more chicken stock. (While waiting on the turkey to finish, you might leave the dressing in the oven -- in this case, add more chicken stock!).
Preheat oven to 350 degrees.

Put a bit of sauce on bottom of pan, Put a layer of 3 noodles, meat sauce, some of the alfredo sauce, parsley, parmesan cheese, then mozzarella cheese.

This is also good if made the night before, and left in the fridge over night.

Cook chicken in large soup pot filled with water to cover chicken for 1 hour or until done along with 4 chicken bouillon. After cooked, remove from pot and place in colander in drainer to cool.
While chicken is draining, take the water left in pot and add rice, celery (chopped small) and onions (also diced) and cook until done, about 20 minutes.
Debone and skin chicken and add it to the rest; salt to taste.
Heat through and you have Cookie's Homemade Soup.
In a skillet with 3/4-inch hot oil, fry the tortilla pieces in batches until golden. This will happen fast, so have tongs ready. Drain on paper towels.
Spread the pieces in a shallow baking pan or pie tin.
Top each with cheese and salsa. Put them under the broiler until cheese is melted.
Makes a great snack.

HOMEMADE PESTO: Combine basil, oil, grated
In a large Dutch oven, lightly brown the meat in oil and garlic at medium-low heat.
Slowly mix in water and tomato paste. Add onions, celery and bell peppers. Simmer, covered, 3 to 5 hours until meat is very tender. Check often and add water as needed, making certain there is about a quart of thin sauce when ready to add the pasta.
Add salt, pepper and homemade pasta.
Simmer, uncovered, 20 minutes to 1/2 hour, stirring often, until broth is absorbed.
Stir in parsley. Serves 6.
To make the homemade tomato sauce: Heat the oil
Sprinkle catfish with garlic salt and pepper.
Place catfish in a well-oiled grill basket, or on a well-oiled grill rack.
Grill on an uncovered grill directly over medium-hot coals for about 5 minutes per side, or until fish flakes easily.
HOMEMADE SALSA: In a bowl combine tomatoes, onion, jalapeno peppers, vinegar and salt and stir well Let stand at room temperature for about 30 minutes before serving.
Chill to store.
Serve over catfish fillets, hot off the grill.
