Boil meat until tender, cool, grind fine.
To 2 cups of the minced meat, add the spices, nuts, brown sugar.
The filling must be moist.
If the filling is too dry, add more apple jelly or corn syrup.

Stir flour into water in a small bowl until dissolved.
Heat oil in a large skillet over medium heat and saute onion in oil until softened, about 5 minutes; add ground beef, olives, cumin, and paprika. Cook and stir the beef mixture until the beef is completely browned, 7 to 10 minutes.
Pour flour-water mixture into the beef and stir to coat evenly. Add raisins, stir, and cook until the raisins are plump, about 5 minutes. Fold eggs into the beef mixture; season with salt and pepper. Set aside to cool before using to fill empanadas.
In a large skillet over medium heat, saute ground beef, onion, green bell pepper and garlic until vegetables are tender and beef is browned, about 6 minutes; drain.
Stir in kidney beans, hominy, salt, basil, pepper, sugar, oregano and red pepper flakes.
For a soup consistency, similar to Mexican Pozole, add up to 2 cups water* until desired consistency is reached.
Simmer, uncovered, for 10 minutes. Serve warm over rice or pasta.
*NOTE:Without adding the water, meat mixture can be used as an empanada filling.
To Make The Apple Filling: In a large skillet over
Preheat oven to 425\u00b0F. Lightly grease 2 baking sheets and line with parchment paper. For the filling, combine beef, vegetables, breadcrumbs, cheese, egg and parsley. Season to taste and mix well.
To assemble, cut pastry sheets in half lengthwise. Arrange 1/6 of filling on each pastry strip. Roll to enclose. Cut each roll into 6 pieces. Place seam-side down on baking sheet. Brush lightly with milk. Bake 20-25 mins, until pastry is puffed and golden. Serve with tomato sauce.

Blend.
Add sugar and cream well.
Add beaten egg and mix thoroughly.
Sift flour and baking powder.
Add to the first, alternately with milk, blending well.
Chill dough.
Roll dough 1/8-inch thick on floured board. Cut into 3-inch cookie.
Place one cookie on ungreased cookie sheet.
Add 1 teaspoon of Date Filling (recipe to follow).
Cover with another cookie.
Press together with a fork.
Prick top of each cookie with a fork.
Bake at 375\u00b0 for about 15 minutes.
Heat oven to 400\u00b0.
Mix thoroughly shortening, brown sugar and eggs.
Stir in water and vanilla.
Sift together and stir in flour, salt, soda and cinnamon.
Drop with teaspoon on ungreased baking sheet.
Place 1/2 teaspoon Date Filling on dough; cover with another 1/2 teaspoon of dough.
Bake until lightly browned, 10 to 12 minutes.
Makes 5 to 6 dozen.
