Heat the oil in a large skillet over medium-high heat. Add zucchini; cook and stir until soft. Add the onion and bell pepper, and cook until tender, about 5 minutes. Make a clearing in the center of the skillet and pour in the eggs. Cook and stir to scramble. When the eggs are cooked, stir in the tomato sauce until everything is coated. Serve warm.

Perfect Boiled Eggs With Spiced Salt

Place eggs in a medium saucepan in a single layer. Cover with water, about 1 inch above eggs. Place pan on largest burner and bring to a simmer as quickly as possible. This should take about 12 mins.
For soft-boiled eggs, remove eggs when water comes to a boil. For medium-boiled eggs, simmer for 1 min. For hard-boiled eggs, simmer for 4 mins.
Immediately run eggs under cold water to cool. Mix together salt, dukkah and pepper. Serve with cooled eggs.

Preheat the oven to 400\u00b0F. Brush four 3/4-cup baking dishes with oil.
Heat 1 tbsp of olive oil in a medium skillet on medium heat. Cook the red onion, mushrooms and parsley, stirring, until the onion softens.
Remove the pan from the heat. Stir in half of the Brie cheese. Divide the mushroom mixture among the dishes. Break 2 eggs into each dish.
Bake for 5 mins. Increase the oven temperature to 425\u00b0F. Sprinkle the remaining Brie cheese over the eggs. Bake for 5 mins or until the eggs are set and cheese melts. Serve hot.

Layer the eggs with the onion in a 2 quart jar to within 1\" of the top. Put all the brine ingredients (except spice bag) in a pot and over medium heat bring to a boil, stirring until the sugar dissolves. Swish the spice bag around in the brine for 30 seconds.

Turn heat to lowest setting; if using an electric stove you can turn the heat off.
Leave eggs covered for 5 minutes, making your toast while you wait. No peeking! Whites will be set and yolks runny.
