The Sandwich: Preheat the oven to 350
Heat skillet on stove top over low-medium heat.
Butter two slices of bread - I used a spread - place a slice of cheese on each half, then spread both slices with a thin layer of salsa. Join halves to make a sandwich.
Melt some butter in the skillet then place sandwich in and let it cook until crisp and browned, turning as necessary.
Mash the tofu and mix with scrambler until combined.
Form a patty with sausage, cook in skillet sprayed with cooking spray on medium until browned about 5-7 minutes, flipping to cook both sides.
Set the sausage aside and cook the tofu 2-3 (in the same skillet) minutes, stirring occasionally.
Build sandwich and microwave 12 seconds to melt cheese.

Heat a grill pan
In a large skillet over medium heat, add meatless ground burger, water and spices.
Mix well and let simmer for 10-15 minutes until heated through and water is absorbed.
Use this mixture to replace the seasoned ground beef in any of your favorite Mexican recipes!
Another note* One can use 1 cup of TVP in place of the soy crumbles or Boca. You might need a bit more that 1 cup of water to keep mixture from getting too dry.

I use Heinz Vegetarian Baked Beans, but the flavor of any sort of sweet baked beans should work with the sharp cheddar and pickles.
I eat this with cold or warm beans, but always solid cheese.

Sandwich -- First piece of rye bread
Lightly brown pita bread in frypan; no oil needed (the natural oils come out).
Layer pita with veggies.
Top with cheese and dressing.
Fold in half and eat.
Makes 1 sandwich.
Toast the wheat bread.
Place the \"bologna\" slices on a plate in the microwave for about thirty seconds.
WATCH CAREFULLY, and do not allow the bologna to harden.
