Set aside 1 jalapeno pepper. Cut the stems off the rest; slice in half lengthwise, and remove the seeds.
Place all of the peppers in a large pot of boiling water. Boil peppers about 15 minutes. Reserve about 2 tablespoons of boiling water, and drain the rest.
Cut the stem off the remaining whole pepper, and place all of the the peppers into a blender. Pour in reserved water and canola oil, and season with salt and pepper. Blend until smooth and creamy. Serve hot or chilled.
Combine cream cheese, jalapeno peppers, Cheddar cheese, and 1/4 cup walnuts in a bowl; mix well. Divide cheese mixture in half and shape into balls or logs.
Roll balls in remaining 2 cups walnuts until well coated. Cover and refrigerate cheese balls until firm, 3 hours to overnight.

Pound the chilis and garlic together in a mortar with a pestle. Add the bean and lightly crush. Add the tomatoes, sugar, roasted peanuts, dried shrimp, lime juice, lime wedges, and fish sauce to the mortar and gently mix together until the sugar has dissolved.
Add the papaya and mix together. Serve.

Wash potatoes and poke holes in them on the top for venting.
Microwave until a fork can be easily inserted into them.
When removed, let cool until barely warm so it is more easy to scoop out the potato into your mixing bowl, saving your potato skins.
Scoop out your potato and mix on all ingredients. (Your Jalapeno peppers should be de-seeded and diced.).
Scoop back into your potato skins.
Top with pre-sliced Swiss cheese.
Bake at 400 degrees until cheese is slightly browned on top.

Chop jalapeno and garlic in food processor, then add cilantro and lime juice and process, then add diced tomatoes. Mix in chopped onion and salt and pepper. Chill for several hours or over night for flavors to blend.

Cut avocados in half, remove the seed and scoop out pulp with a spoon.
Mash pulp with a fork into a soft puree and add the lemon juice, salt, pepper, garlic, jalapeno peppers and hot sauce. Blend in cream cheese.
Makes approximately 2 cups.

Mix black-eyed peas, green pepper, onion, jalapeno pepper, salad dressing and tomato.
Serve with tortilla chips.
For the stuffing I like to use Stove Top stuffing for pork.
Cook stuffing mix according to package directions.
Combine sausage with stuffing.
Cut stem and seeds from jalapenos, fill with cheese. Add egg to sausage and stuffing mixture. Mold mixture in egg shape around jalapenos.
Roll in bread crumbs until covered well.
Bake in a 400 degree farenheit preheated oven for 30 minutes or until brown.

Mix seasonings and onion and jalapeno (optional but perfect spiciness)with ground beef.
Form into meatballs (approx 1 inch) around sliced of hard boiled egg and place into a large soup kettle.
Fry until ground beef is just about done.
Add everything except corn and spinach.
Simmer until carrot is soft.
Add corn and spinach.
Heat thoroughly.
Sprinkle cilantro once soup has been served.
Preheat oven to 350\u00b0.
Combine refried beans, jalapeno relish and enchilada sauce together in a bowl, mixing together.
Add 6 ounces of cheese and mix (add fresh jalapenos, optional).
Wipe inside of bowl with paper towel (this keeps from burning the inside of the bowl.)
Sprinkle with remaining 2 ounces of cheese.
Cover and place in oven for about 15 minutes.
Stir and cook for 15 minutes longer or until bubbling or cover and microwave for about 10 minutes.
Stir before serving.
