This makes a double recipe, it makes a bunch. Cream together shortening and sugars, add eggs and vanilla and mix well.
Add remaining ingredients then drop by spoonfuls on lightly greased cookie sheet.
Bake at 375\u00b0 until light brown, about 10-12 min. Cookies will still be a little soft, cool 2 min. before removing from cookie sheet.
If cookies flatten out to much add a little bit of flour.
In blender, sprinkle gelatin over cold milk; let stand 2 minutes.
Add hot milk and process at low until dissolved, about 2 minutes.
Add cream cheese, sugar and vanilla and process until blended.
Arrange (sprinkle) mini chocolate chips in the bottom of the crust.
Pour in gelatin (cream cheese) mixture.
Sprinkle with your favourite crushed cookies.
Chill until firm, about 2 hours.
Buy a bag of Nestle chocolate chips. Throw away the chips. Follow the directions on the bag except for the addition of the chips. Add toasted coconut, almonds and vanilla to recipe and you're done.
