Mint Chocolate Chip Ice Cream Sandwiches - cooking recipe

Ingredients
    2-3 tbsp fresh mint leaves, roughly chopped
    1 tbsp sugar
    8 cups vanilla ice cream, softened
    -1 None Chocolate Chip Cookies
    1 cup butter, softened
    1 1/4 cups granulated sugar
    3/4 cup sweetened condensed milk
    1 tbsp cocoa powder
    9 oz milk or dark chocolate chips
    1/2 cup flour, sifted
    2 1/2 tsp baking powder
Preparation
    In a food processor, combine mint and sugar. Pulse until finely chopped. Immediately fold through ice cream. Return ice cream to freezer until required.
    Meanwhile, for the chocolate chip cookies, preheat oven to 300\u00b0F. Line a baking tray with baking paper.
    In a stand mixer, cream butter and sugar until pale, light and fluffy. Add condensed milk, cocoa powder and chocolate chips. Gradually stir in flour and baking powder and mix until just combined. Roll heaped tablespoons of mixture into balls (aim for 20-30) and place on tray. Flatten cookies out slightly, allowing room for the mixture to spread, and bake for around 12-18 mins. Remove cookies from tray and transfer to a wire rack to cool completely.
    To assemble the ice cream sandwiches, place a cookie upside down. Add a large scoop of mint ice cream then top with another cookie to make a sandwich. Gently press together. Serve immediately.
